If I may, I'd like to offer a slightly differing perspective on this character. I think this AT is the perfect opportunity to discuss the characters in a meaningful, in-depth way.
Since day 1 of the show, Meenakshi has been extremely devoted to keeping her family intact. I believe that a lot of what she does is out of fear that Abir will follow in her footsteps and make the same mistakes that she did. When she married a man that her family did not trust nor approve of, she suffered dire consequences. And I am in no way blaming her. We have already seen that Mehul is a man who is very, very skilled at deception. But because of this mistake of hers, she had to choose to live a life in her maternal home as a single mother, raising her biological son and her adoptive son, a son whom she loves dearly, but is in her life as a product of her misstep. This takes a lot of strength and willpower. She could have chosen to project her bitterness that she had from Mehul's betrayal onto her sautan and her son, but she took them in so as to atone for the guilt she felt for allowing herself to be reduced to a mere fool by a man that everyone told her not to trust.
I think she sees her relationship with Abir as a mirror of her relationship with her dad, but without the missteps. She has been very adamant from the beginning that her sons marry girls of her choice, but I don't think it's because she's conservative. In fact, had she been "conservative", she would've never taken in Parul and Kunal, she would've never chosen to live as a single mother in her maternal home, and she wouldn't have taken the family business into her own hands. I think that she is controlling because she is very afraid that Abir will end up repeating the mistakes she made by blindly falling in love and getting married to the wrong person. I mean, just look at what that did to her life. The only reason she never had that fear with Kunal was because she knew that she brought up Kunal to be a person who is equally devoted to his family, and will do anything to keep it together.
She has constantly fought with Abir over his choices, and while Abir isn't necessarily wrong all the time, he's so busy seeing his mother as the villain that he is unable to understand her motivations behind her twisted doings. He has constantly fought with her over her not telling him where his father was, completely unwilling to hear the part where she says "your father has hurt me and the rest of the family a lot. He has put us all through hell." He never understood that Meenakshi doesn't owe him an explanation. That explanation should've been good enough for him. And as far as Meenakshi's parenting goes, she probably worked super hard to make sure that Abir and Kunal never felt their father's absence. But since Abir overlooked this, he was unable to see eye-to-eye with her about his father until he found out the hard way for himself, and in the process, this caused a lot of heartbreak for the rest of the family.
Where her character falls short isn't intentions. It's her inability to see beyond just the family "unit", and look closer at each individual person's happiness. She is a firm believer in, "well if everyone looks happy collectively, then that is all that matters." It is also her inability to see the widespread consequences that her zeal to keep her family together at all costs has on the people around her. She can be so short-sighted (some may even say selfish) sometimes, that she is fine with reducing people who are not important to this familial equation to mere collateral damage. Hence the scheming, the plotting, and the manipulating.

I must have missed where it said she was conservative. I thought the reference to conservative was her character as kokila (which I've never watched). Meenu is pretty progressive and has had to be. She is, as you say, short-sighted and extremely dismissive of people outside her close family unit and even people within sometimes.
She is afraid Abir will make her mistakes (seeing as he is so like her) and trying her best to keep him from those. But I disagree that her explanation that his dad hurt their family should have been enough for him. Some kids want to know more. For Abir, especially so, since his memories don't reconcile with what he's being told. That he should be grateful to her for raising them on her own and not question her about his dad - I don't agree. I remember his memory of ganesh chaturti as a kid where Meenu just says she doesn't want him to talk or think about his dad - seems like an invitation to ponder what happened. How many times in his childhood would she have shut him up like that? Leaving kids with hurt and unanswered questions like that can do a lot of damage, and that has been the basis for the damage in their relationship.
I know she loves Kunal, but she also loves to control him, so not quite sure how she'll behave with him if he doesn't conform - we'll see soon enough. Kunal's characterization is pretty good though. He does think of family, and she has taught him that, but he also has a conscience and cares if he hurts someone innocent. That Meenu doesn't really have. Maybe she's been hurt so much in the past that she's numb but they haven't really shown that.

what meenu today is because of her past and she is doing everything in the name of family but i really cant say for her family unity is important, for her only her power and ego are important, im not saying this because of mishbir or kuku but because of her behaviour during ketki marriage time, just to keep kunal away from calling mishti she burnt ketu's ghar chola and sent both abinal for it, shaadi of ketu is nothing less than a deal, where she wants her control of ketu's family by helping them in business and shaadi ke tym...she uses laxman for every info then why cant she do that in ketu's time?
coming to abir, he is been with his father for some years so he has memories with him and he thought good values to abir so his questions and search for father is common as anyone not even bothered to say actual truth...
kunal never seen his father from birth so it never bothered as abir took that place for him as he know without father presence how will child suffer...

agar meenu ki pasand ki ladkiyon se abinal ki shaadi hoti tho, there is no guarantee that both girls will make peace in family. may be she will control until she is alive but uske baad that family will fall apart... so according to me find some one in your sons or bahu's who can keep the family together...

The maa-beta tashan has evolved over the show's journey...I do miss those initial teekhi-mirchi and sarcastic taunts as well, but we need to also see and understand how dynamics between the two characters have changed immensely. Abir and Meenu have gone through many many twists and turns over the course of the story in just one-year.
It is not suitable for us to expect the same type of equation between them from the start, to now. There has been a huge amount of emotional change in Abir as a result of Baba's entry and exit. It has inevitably influenced his relationship with Meenu forever, and left an irreversible mark on their relationship. Until Meenu truly realises what she is losing, genuinely try to redeem her behaviours and Abir sees past Meenu's manipulative behaviour...only then will we see the middle ground

she is the catalyst driving our show..if not for her unending plottings & plannings , we could not have got Mishbir or Kuku 😛
though we all hate her for the emotional pain she puts us through sometimes ,we cannot deny we love her for this fact

It was about time we opened one for our beloved villain, given the fandom's anokha relationship with Bigben (we love to hate her). Yes indeed, Meenu is not a conventional villain if you take the effort to dig deeper and look beyond the usual loud voice and evil smiles. She does have various layers and shades, which are worth a separate thread like this to discuss and analyse👍🏼👏
