basically they had to keep the taste of the liquid intact in the solid. adding besan & making khandvi certainly dosent give off chaas taste. for eg in gurkiraats case the solid had the main flavor of masala chai

Anyways, I don’t think Gurki’s biscuit base would have had masala chai. May be the masala chai’s spices. The biscuit base is a meringue cookie! He did not soak the biscuit. Just put some masala chai on the bottom of his serving dish which the biscuit soaked up. Unsure how he incorporated the masala chai in the Mascarpone cheese too! If it is only the spice mix of masala chai then again it is not keeping the taste of the liquid intact!
Yeah, a buttermilk infusion will not be the same as drinking buttermilk!
