No need to loose sleep over akash's love confession (it looked more like a desperate puppy looking for some heavy petting). However confession was needed to progress monu and uv love story.
Every great luv story begins with extreme hatred and culminates into greatest luv story of the TVdom (Bani-Jai,Angad-krupa,Milind-prachi, Sujal-Kashish to name the few). All these great luv stories had female lead hating the guts of greyish hero and then fallen irrecovably in luv), even bani and prachi had luv interest before they got married. Rest is the history.
So following tradition of the teleworld monu needed some reason (real one) to hate UV. By forcefully announcing his intentions, UV basically showed red flag infront of raging bull (ie our own monu). She will fight every inch of the way to the alter, as she will confuse her crush for akash to be great luv , whoever coming between her and akash is the villian, but during the journey she will relaize what is true luv and for whom her heart really beats for . And UV being master planner without realizing will loose his heart little by little to our sherni and there will be a day where UV will be ready to let go of Monu for her happiness and hence winning our princess forever.
Being sucker for fairy tale romance please take my ramblings as a highly romanticised POV of an a TV serial Veteran.
P.S.: Being Management graduate, my take on producers strategy to launch new serial (as like any new product in the market ) , To gain viewership for new serial during intial weeks is very difficult considering comptetion, so they had portraied Abishek (Akash) as main lead, as he had some fan following during his last serial, so they start watching serial from first go and u will get sponsors also. they know UV is their trump card and he will waste no time in gaining acceptance from the audiance, such is his aura, only blind will miss that. Once the foundation is laid they will wash off akash, will be used as a catalyst in Monu and UV luv story.
