I don't know the process of starting a resturant but I am a bit amused that Mezbaani which has not even started has so much hype so many chefs and cooks food everyday
Even I am wondering who are they cooking for .. when the restaurant has not even opened …it can’t be that all the chefs are getting trained ..

I kind of think Vikrant was suspicious of both Puneet and Aishwarya. He doesn't seem to trust them completely right now so wants to supervise everything himself. Actually, they have to keep trying out new dishes before they finalise the menu. There will be tastings by the management whether they want to keep the dish or not, which would be their signature dish etc etc.
Even if they have restaurants all over, they have to customise it as per the Indian palate. So the kitchen starts running way before.
Imagine if the chefs started cooking only on the first day of the launch. It would be chaotic.
Correct, hey even time the dishes and how long it takes to cook, multiple inspections and if it's high class like ARS😂, there will be more inspections to get a 5 star license
They also do this as sort of practice runs.
In hotels, the week before opening, they get guests to stay free of cost and ask them to order room service to check if the food is delivered on time, if it's on appropriate temperature etc.
A housekeeping staff has to clean up the room in 7 mins flat including toilets.
I was part of this experience once.
We were given timers and give ratings to the service.
Oh wow 7 minutes cleaning is crazy 😧. That must have been nerve wrecking and amazing experience 🤩
I also read they start with soft opening, invite special guests to review the food and restaurant, fine tune based on the feedback
A lot of work for months at a stretch goes into opening a restaurant, it's serious hard work and investment
