They did. Men would gift hair ties to younger men they adored so that it was helpful to them. It was in practice those days. Valmiki Ramayan Uttar Kand mentions sages and nobles gifting Luv Kush with yellow/orange silken hair ties.
It wasn't just pony tails, there were many more hairstyles that were in vogue.

Yes. It was mentioned that they removed their matted locks. Before starting the exile, they apply substances (mostly the milk of certain trees or plants, like banyan, peepal, etc.) on their hair that ... fossilises their hair as matted locks like the Siddhas, Yogis and Aghoris we see these days. Any hair that grows afterwards grows within that shell and that outer shell of fosilised hair protects the inner hair and head from harsh climates. All sages, ascetics and mendicants do this and in forests it is not easy to procure hair care products and not easy to maintain one's hair. Men and women had long hair those days. To remove them, the outer fossilises hair is cut off and the remaining hair is trimmed and styled as per one's wishes. Forest dwellers who followed ascetism would cleanse their hair whenever possible for them. If they practice penances they might donit after a few years when their penance is over or if they are travelling mendicants, they would cleanse themselves in holy rivers or lakes beside temples.
Moustache and beard can be trimmed from getting too long with an arrow/sword/knife... It would be difficult to have their beards sweeping the floor and 14 years worth of healthy beards can certainly put Cinderella to shame.

For practical purposes. Long hair would keep falling all over the face and get into the mouth while eating. In the South, we are told to tie up our hair before eating. Some families won't serve their members food unless they properly tie up their hair.
Also, loose hair gets blown and tangled. It's a pain the detangle and that leads to a lot of hair loss.

Valmiki Ramayan does not mention anything about the sisters. It just says many people followed Ram into Sarayu. That's what I remember but I may be wrong.

we get details of beauty of ayodhya lanka panchavati

no details
regarding the sisters of sita
i think they need a few pages for the depiction
