I have seen Saajan, DHKMN, Hum, Saudagar, Phool Aur Kaante the most out of this list as a kid.
I would choose Saudagar as most fav purely for Raaj Kumar and his swag, one liners and ability of Ghai to give such solid roles to old actors and prove they can carry film on shoulders and I love innocent Manisha in this film.
Saajan and DHKMN would be in a tie in close second.
This is much tough now for me than '90 one , every one of them super memorable especially songs .
Alright a tie b/w Henna , Hum , 100 days , Sadak & Phool Aur Kaante .
And a shout out to some other honorable mentions also from '91 list like Khilaaf , Swarg Yahan Narak Yahan , Saathi , Maa , Roohani Taqat etc. . And Lekin for 'yaara seeli seeli' .

Both 100 days and Dil Hain ki Manta Nahin can be remade now, they'll suit contemporary BW I think
Don't think the stupid Sajan will work... Or it might no accouunting for (BW audience's) taste
