I wish she sang for Fitoor but it's like he's switched loyalties by taking Sunidhi who could easily get work elsewhere.

Aamir is such an underrated film and Ek Lau is such a haunting song! Thank you for reminding. I have not listened to that song in many many years.

To answer your topic I really don’t get it. I feel like mainstream India only likes those shrill, squeaky female voices. Ones who stand out like Shilpa Rao, Anushka Manchanda etc are sidelined

Very true
Sunidhi is one of the few who managed to break that mould - and she is just so awesome ! Prefer her voice over Shreya, Alka, etc.
Shilpa often ends up with not the most popular song in the album, but some real memorable gems
