Ukad is steamed rice flour (ukadne is steaming/also used on the days when it's very humid and sweaty)
Inner filling is coconut, jaggery, khaskhas which is usually moist.
If dry coconut powder/shavings are used, it is called dry Modak. Has longer shelf life
While making modaks is a skill set, since the petal like texture is to be achieved uniformly. Making ukdiche Modak is much more difficult.
The rice flour has till be kneaded and molded when the cooked flour is slightly hot. Chances of getting hand burnt and then the moulding the outer layer with uniform thickness is a trick not many have.
I absolutely love Ukdiche... but mine turn out different sizes, shapes and thicknesses🤣

I also made steamed modak day before yesterday. Same coconut jaggery filling.
We make a savoury modak also with urad dal filling inside.

True ! It's such an exhausting job ! Ek to bachon ko sambhalo and then the parents who are no less than kids No yaar, I used to not. Dheere dheere pattar dil hogayi as the show went by and became worst and worst. Then, saw Nutty and the others are having fun being silly so I joined in and spared myself some heartache. It's still hurts deep down..but kya karein ..
