Don't know if I'd call them the best but I really enjoyed Tamasha and Badla.

Personal faves are very welcome - and I've seen Tamasha. It was interesting, maybe the most European-style Hindi film I've seen, with the slowburn elements and puppet show metaphors (I may be sounding like a complete ass in case this is also a typical Bollywood style😆).
Will check out Badla too.
These are the ones that came to my mind & probably the best of the last 2 decades imo
3 Idiots- This movie never gets old. Has so much repeat Value
Mai hoon na - Again has so much repeat value & can be watched again and again
Baghban - loved this one
Dil Chahta hai - is pretty long but a very nice watch
Bajrangi Bhaijan - loved it
Munna Bhai MBBS - My absolute fav
Aankhien - I enjoyed watching it. Amitabh’s character trying to get 3 blind people rob a bank was so unbelievably good
Murder 2, Gangster are pretty good if you want to see mystery.

I didn’t even make it to the 10 minute mark before I fell into an open mouthed coma.
Ok Dabangg was a fantastic watch, everything one would want in a Bollywood movie. Chulbul Pandey was a great mix of thuggery and vulnerability, awesome bits of humor in unexpected places (Chulbul and random thug dancing to thug's ringtone🤣), satisfying ending with apt justice served and family reunited. The romance was a little... well, aggressive but the songs were lovely and Sonakshi was fierce (if a bit underused) in this.
But the real revelation was 'Omkara' - holy moly, how did I never know there were Bollywood adaptions of Shakespeare plays? I'm a huge fan of "Othello", I've watched every good and bad film adaptation I know of except this one - which wow! It translates so well to the UP setting, the vernacular, the characters everything - totally inspired. I was blown away! Am excited to watch Haider and Maqbool to round out my three most fave plays of the bard.
(Tagging Guddu Pandit who was the first to suggest Dabangg and Omkara but thanks to everyone else who seconded and to those who rec'ed Maqbool and Haider)
