In October 2020 they said they had just 10 more days of filming - mostly songs. Even with all the COVID delays how has it taken another 16 months to shoot 10 more days?

Even then Fox Studios (Disney after the take over) wanted the rough cut shorted from 3hrs to 2/12 hours and yet it keeps filming and filming.
