You can accumulate a wealth of knowledge on someone's thought process from the little things they do and the jibes they take to devalue others in general. So, while I don't exactly "cancel" someone over one or two offhanded remarks, I definitely distance myself if not completely refrain from interacting with the person if I observe a problematic pattern over time. Cuz changing someone's upbringing is definitely not my cup of tea... plus they're better suited as clients for professional counselors anyway to sort out their issues.
I am not a fan of cancel culture and think that it is problematic and has gone too far. Awareness and giving people a voice is important but forcing people to have the same opinion as you is messed up.
The things that make me cancel someone are: abuse, murder, racism, bigotry, pedophilia/ephebophilia, etc. If someone was a bigot or made insensitive comments in the past but is genuinely working on themselves by learning, apologizing and haven't repeated their mistakes then they deserve a chance. The rest are big crimes that must be punished though.
