In case of the job offer, Sara is right now just overwhelmed that a dream of hers that seemed to be out of reach is now so within reach. But here too Ian has assumed and presumed that Sara would be okay with everything: marrying him, working at NCC for a lower pay etc etc. He's just run ahead and made decisions without consulting her, and it hasn't hit Sara yet. Possibly what happened with Ryan has unsettled her so much that she's not thinking straight.
You're right about the relationship being like that of a teacher and student, or a mentor and protege. It has been kind of like that for Ian and Sara. Ian has been her teacher and guide earlier, so probably it has spilled over to real life as well. He thinks he needs to guide her in everything. And that he's justified to make decisions on her behalf. Which is kind of disrespecting Sara and her intellect.
