There be 2 versions.

North mein it's lachchha paratha.

Kerala mein it's parotta (I think), made with coconut oil.

Both have different tastes, and both taste like heaven with mutton or chicken (chholey/rajma is also kind of okay, but not as good). It's best to have it streetside at night. Kind of fascinating to watch it being made. 😊
