Great dancer, expressive actress and a very good actress when required but is a role that played that became iconic and demands for remake, all her body of work revolves around her iconic dance numbers, but trying to think a role or a dialogue that has become remembered or iconic.
No, Madhuri Dixit is very good, oftentimes brilliant actress. The fact that she's a brilliant dancer, too, shouldn't detract attention from her acting chops and versatility. There are many Iconic scenes of hers, including those in uderrated gems such as Dedh Ishqiya.
Let's start with the goldmine that is Devdas, a film whose emotional core is Madhuri's performance.

That's how you serve tea to vile, smug hypocrites.

HAHK is a goldmine of iconic scenes, but the uhu-uhu + the roller skates drive into the scene are hilarious. Like others said, one shouldn't underestimate Nisha. It's a tricky character to play. Could any of the current 20-something actresses pull it off? No, because they lack the passion and the charm.

Lajja, Wajood, Prem Granth, Mrityudand, Anjaam - MD's characters in those were more woke than all of today's BW. No wonder those films failed at the domestic box office.

Starting from 1:39, Madhuri's character is dealing with sexual harassment at work, shaming the monster for everyone to see.
Madhuri gave a riveting, multifaceted performance in Anjaam. The final five minutes prove that revenge is best served hot, with a trident and raw energy:

Some of Madhuri and other actresses' scenes in Mrityudand still strike deep... Amazing work from all involved.
On a lighter note, Beti in Beta is such a well executed character. I love the scene in the shed where her and Anil's characters hide (52:20). Madhuri is fabulous with all of her costars (be it male or female), but the jodi with Anil is truly special. Indra Kumar managed to capture that special thing even in Total Dhamaal, where their characters are on a brink of divorce:

I like the part of Tezaab where Mohini puts Munna's love to test (12/20 on YT). It's like an emotional seesaw and Madhuri did it like a seasoned pro. Ditto to Ganga in Khalnayak - a character which adopts various masks throughout the film. E.g., she exaggerates for the sake of other characters at the workplace:

goes undercover, pretends to be an ordinary dancer, kinda falls for the thug, gets busted, suffers, is stripped of dignity and drops the act only in the final scene in the courthouse, and in the meantime pokes a bit of fun at other actresses' popular performances:

Finally, the cishet film that never was, a.k.a. Dedh Ishqiya, which did what Ek Ladki Ko Dekha Toh Aisa Laga could have have only dreamt to do, and where Madhuri and Huma create something special (if only Sonam had 1/10 of those actresses' talent...). Its subtle, otherwordly beauty is best summed up by this fanvid:
