These recipes are good for Pregnant women, this episode was Cooking for Pregnant women special but I guess everyone can enjoy them bcos all recipes seem to be yum.
TEEN DAL DOSA
Ingredients
Split Bengal gram (chana dal) 1/3 cup
Split pigeon peas (tuvar dal) 1/3 cup
Split green gram (moong dal) 1/3 cup
Parboiled rice (ukda chawal) 2 cups
Oil 1 tablespoon + to shallow fry
Asafoetida a pinch
Cumin seeds teaspoon
Mustard seeds teaspoon
Whole dry red chillies, broken 2
Curry leaves 4-5
Coconut, scraped 2 tablespoons
Turmeric powder teaspoon
Salt to taste
Method
1. Wash and soak the three dals and rice in six cups of water for four hours.
2. Drain and grind coarsely using a little water. Transfer the batter into a deep bowl.
3. Heatone tablespoon of oil in a pan and asafoetida, cumin seeds, mustard seeds, broken dry red chillies and curry leaves. Grind this with coconut into paste.
4. Add this to the dal batter and mix well. Add turmeric powder and salt and mix.
5. Heat a tawa, drizzle some oil, and wipe it with a muslin cloth.
6. Spread a ladleful of batter thickly. Drizzle a little oil all around. Cover and cook on medium heat till the underside is golden.
7. Flip over, drizzle some more oil till the other side turns golden.
8. Serve hot.
BAKED KESARI PUDDING
Ingredients
Milk 5 cups (1 litre)
Lemon juice 1 tablespoon
Saffron a generous pinch
Powdered sugar 2 tablespoons
Green cardamom powder teaspoon
Baking powder teaspoon
Apples 2 medium
Brown sugar 4 tablespoons
Almonds, blanched, toasted and slivered 10-12
Method
1. Preheat oven to 180C.
2. Heat milk and when it comes to a boil add lemon juice and let the milk curdle. Drain completely and place the chenna in a bowl.
3. Add saffron, powdered sugar, green cardamom powder and blend with a hand blender. Add baking powder and blend well.
4. Halve and core the apples and slice them thinly. Arrange half the slices in a baking dish. Sprinkle half the brown sugar and then spread the chenna mixture evenly over.
5. Arrange the remaining apple slices along the edges of the dish. Make a thin lining with brown sugar along the apple slices.
6. Place the dish in the preheated oven and bake for twenty to twenty minutes.
7. Sprinkle almonds on the top and serve.
GRILLED SPINACH SANDWICH
Ingredients
Brown bread 8 slices
Sesame seeds (til), roasted 4 tablespoons
Fresh spinach leaves (palak), finely chopped medium bundle
Olive oil 2 tablespoons
Onions, finely chopped 2 medium
Salt to taste
Green chilli paste 1 teaspoon
Potatoes, boiled and mashed 4 medium
Green chutney 8 tablespoons
Cheese, grated 1 cup
Red capsicum, seeded and cut into thin strips 1 medium
Method
1. Preheat the oven to the maximum temperature.
2. Heat oil in a pan, add onions and saut till lightly browned.Add spinach and salt and stir.Add green chilli paste and continue to saut.
3. Add mashed potatoes and mix well.
4. Arrange brown bread slices on the work top. Spread green chutney on all of them.
5. Spread the potato mixture over the chutney evenly. Sprinkle grated cheese and toasted sesame seeds. Finally place red capsicum strips decoratively on the top.
6. Place the bread slices on the grill rack in the preheated oven and grill till the bread slices turn crisp.
7. Serve hot.
