Chicken Biryani

Ingredients:

Rice 1 cup
Water 1/4 cup
Chicken 250 gms in small pieces
Curd 100 Gms
Garam masala 1 tablespoon
Red color a pinch dissolved in a teaspoon of milk

Method :
Cook the chicken, 1 tablespoon of water, curd, garam masala and salt at medium mode for 10 minutes.
Add rice along with the required amount of water and cook on high for 16 minutes.
Cover it well.

Add the color on top and garnish with fried onions and serve hot

This is a very easy recipe for the famous Bengali Mishti Doi [ Sweet Yoghurt]

The Ingredients
0.5 kg Yoghurt
1 evaporated milk
1 condensed milk
600 gram fresh cream


The Method
Beat the yoghurt in a bowl, and then cream ,condensed milk, fresh cream and carnation one at a time.
Then place the mixture in a microwave-oven proof dish and heat it for 3 minutes . You could then let it cool and enjoy it :)

Mutton Curry

Ingredients:

1 kg mutton (boneless cubes)
6 cardamoms
1 bay-leaf
5/6 cup oil
2g saffron
3tbsp. Garlic paste
1 boiled egg
4 cinnamon
8 cloves
1/2 cup yoghurt
1/2 tsp black pepper
3tbsp. Ginger paste
3 tbsp. Green chilli paste
Salt to taste

Preparation:
Heat oil, add cinnamon, cardamom, cloves and bay leaf.
When brown put ginger, garlic, green chilli paste.
Saute for a few minutes and add yoghurt and mutton cubes.
Put it in a glass dish, cover it and micro it for 10 minutes and then stand it for 5 minutes.
When meat is tender, add salt, pepper and saffron and micro it further for 3-4 minutes. Stand it for another minute and serve.
To serve garnish with quartered boiled egg and mint.
A squeeze of lemon juice will greatly enhance the taste. (For chicken curry use chicken instead of mutton).

CHEESY CHICKEN

INGREDIENTS:

5 tbsp. butter or margarine - melted and divided
1 cup crushed cheese-flavored snack crackers
tsp. pepper
4 boneless, skinless chicken breast halves
cup sour cream

DIRECTIONS:

Place 1 tbsp. of butter in an 11x7x2" microwave safe dish and set aside. Combine cracker crumbs and pepper. Dip chicken in remaining butter, then spread with sour cream. Roll in crumb mixture. Place in prepared dish and cover loosely. Microwave on high for 6-7 minutes or until chicken juices run clear. Let stand for 5-10 minutes before serving

MICROWAVE MEATLOAF

INGREDIENTS:

8 oz. can tomato sauce
cup brown sugar
1 tsp. prepared mustard
2 eggs
2 lbs. ground beef or turkey
1 tbsp. minced onion (or medium onion, minced)
cup bread or cracker crumbs
1 tsp. salt


DIRECTIONS:

Mix together the tomato sauce, brown sugar and mustard in a small bowl, then set aside. In a large mixing bowl lightly beat the eggs, then add the ground beef, minced onion, bread crumbs, salt and half of the tomato sauce mixture, reserving the other half. Thoroughly mix together - I prefer to use my hands, but some folks are squeamish about that, and if so, use a spoon or fork to mix well. Then put the meat mix in a 2-quart microwave-safe casserole dish and pour remaining tomato sauce on top. Cook uncovered on high/maximum power for 12-14 minutes. Let stand covered for an additional 10 minutes before serving.

Fat-free microwave potato crisps

Ingredients:

-3-4 potatoes , sliced very thin (I used a peeler, actually!)
-Pam spray[b/c i wanted fat free.. u can spray regular oil too]
-A flat microwave-safe dish
-Salt and other condiments/spices/herbs to taste

Method:

1. Spray the dish lightly and evenly with Pam/oil.

2. Lay the thinly sliced potatoes on it in a single layer, making maximum use of the space available.

3. Sprinkle on salt and whatever spices/herbs you like.

4. Microwave for 3 minutes at first, check to see the done-ness of the crisps, then microwave again (a bit of experimentation required here, but usually another 2 minutes will do) till they are crisp and golden.

Once you find out the time required for optimum crispness and done-ness, you can straightaway put in the correct time. Mine took 5 minutes per batch.
