You can substitute yogurt/sour cream in cookies/cakes/muffins for eggs.

is there an eggless cake recipe that can be made in india-without chocolate and soy. bcz i want to make one for my grandma who doesnt eat these things n shes in india.

Hi
I am new to this forum and when I saw this topic, I thought you might like my recipe because all the ingredients are readily available in India. Infact you might have them all at home:
You need:

500 g flour

300g caster sugar

2 tsp baking powder

2 tsp bicarbonate of soda

300ml water

2 tbsp distilled white vinegar

125ml vegetable oil

2 tsp vanilla extract

Preheat the oven to 170C/325F/gas mark 3. Put the wet ingredients in one bowl and sift the dry into another. Slowly add the wet to the dry, and beat: the consistency should be like runny honey. Pour into a greased cake tin (or tins) and bake for 20 minutes, until springy to the touch. Add any topping you like .

You can add some lemon peel to the recipe and then once the cake is done but quite warm, mix some icing sugar with lemon juice and that will make a delicious lemon cake.
