I am sharing with you all my personal recipes, inspired by people I have associated with and, to some extent, created by me; tried and tested. These recipes emerged as I went through trials as a full-time student; struggling to get rid of fast food and switching to home cooking.

This is my ONE-STOP thread for all my personal recipes that I would be sharing with you all. Please feel free to ask me any questions that you may have.

Desi Chicken Noodles

Ingredients:
1 packet spaghetti
400 gms chicken breasts cubed
1.5 (approx 300 gms) cups mixed veggies (store-bought, frozen ones)
3 tblspns white vinegar
4 tblspns tomato paste
3-4 tblspns Louisiana hot sauce
4 medium-to-large tomatoes, chopped
2-3 small-to-medium onions, sliced
2-3 tblspn oil
5-6 cloves
1.5 tspn cumin seeds
1/4 tsp red chili powder
1/4 tsp black pepper powder
Salt to taste

Directions:
1. Boil the noodles Al Dente and keep aside. Make sure the water is boiling hot before you add the spaghetti. Season with a little salt. DO NOT add oil.
2. In a hot non-stick dish, heat up the oil.
3. Once the oil is hot enough, add cumin seeds and let them crackle.
4. Add the whole garam malasa - cloves.
5. Add the onions and saute until golden brown.
6. Add the cubed chicken breasts and saute.
7. Add the chopped tomatoes and allow to break down

*** ALLOW THE MOISTURE TO EVAPORATE AT THIS POINT ***

8. Now add the black and red pepper powders and stir.
9. Add all the condiments at this time (sauces, vinegar, and paste).

*** NOW LET THE ABOVE SAUCE GET COOKED WELL. THE MASALA MUST BE DRY IN ORDER FOR YOU TO PROCEED TO THE NEXT STEP. YOU CAN SEE OIL APPEARING ON THE SURFACE. ***

10. Finally add the spaghetti and stir well.
11. Check for salt.
12. Cover, lower the heat, and let simmer for 8-10 mins before serving

**DO NOT substitute hot sauce with Tabasco as they both have a totally different taste.

Chhole - Chick Peas Curry

Ingredients
:
Chick Peas - 2 cans
Turmeric - 1 tsp
Red Chili Powder - 1 tsp
Lemon Juice - 1/2 cup
Tomatoes - 4-5 medium (diced)
Mango Powder - 1 tbsp
Garam Masla - 1 tsp (optional)
Oil - 2-3 tbsp
Ginger-garlic Paste - 2 tbsp
Cumin Seeds - 1 tsp
Onions - 2 medium julienne
Salt - To taste

Directions:
Heat oil in a
non-stick pan
Fry the cumin seeds
When the cumin seeds start to crackle, add onions and fry until they turn golden brown
Now add the g-g paste and fry well
Now add tomatoes and cook them well until they break down
Now add the chick peas and cook well
After 5-7 mins of cooking, add the spices, mango powder and salt
Cook the chick peas well in the added spices
(If the dish looks too dry due to spices, add half a cup water mix it well)
After 5-6 mins, add lemon juice
Mix well, lower the heat, cover the pan and let it cook on steam/pressure for another 5-6 mins...

Garnish with freshly chopped coriander and finely chopped onions.

For a thicker curry

Add a mixture of 3 tbsp yogurt and 2 tbsp tomato sauce and mix well.

Serve with

Butter buns/bread or parathas/rotis

Aloo Gobhi

Ingredients:

Cauliflower - 1 medium (chopped in medium-sized pieces)
Potatoes - 5-6 (medium, diced)
Tomatoes - 4-5
(medium, diced)
Turmeric - 1.5 tsp
Red Chili Powder - 1.5 tsp
Onions - 2 (medium, julienne)
Ginger-garlic paste - 1 tbsp
Black Mustard Seeds - 1/2 tsp
Cumin Seeds - 1/2 tsp
Bay leaves - 2/3
Salt - To taste

Preparation:
In a non-stick skillet or pan, heat oil on a low flame
When the oil heats up, add mustard seeds, cumin seeds and bay leaves and fry well
(DO NOT INCREASE THE HEAT YET)
When the seeds and leaves start to crackle, add onions and fry the onions
(You can now raise the heat. Fry the onions on high heat and keep stirring to make sure they don't over-cook or burn)
When the onions turn golden-brown, reduce the heat to medium and add the g-g paste
After a couple mins of frying the g-g paste, add tomatoes and cook until they break down
Now add the potatoes and cauliflower and fry well
Now add the spices and mix well
As again, if the mixture looks too dry because of spices, add about 1/2 cup water and not more
Add salt
Mix well and let the mixture cook well on high heat for about 5-7 mins
After 5-7 mins of cooking, reduce the flame again, stir well, cover the pan and let it cook for another 5-7 mins on steam/pressure
Your Aloo-Gobhi is now ready! :)

Garnish with freshly-chopped coriander

Serve With

Ghee Pulao, roti or regular bread

Nahin yaar. 😆 I learned these when I was a student. Trial and error. Yeah, I was staying away from my family then.

Desi yaar Superb. As far as i feel that my mum would never let me make up this recipe in home. Like always i would have to stay saturnine.
