What I kinda feel is that this whole don't call me sir started developing the moment he saw Anokhi with the ACP talking freely. First when Ahir visited Vineet's place and Shaurya found them talking outside, the look was damn intense and then when he saw the duo in ACP's car, that was the highest irritation point of Shaurya lol.
What I think is that he felt not exactly angry per se but highly disappointed that the girl who scolds him, lectures him and taunts him with so much right is now expressing the same kind of rights in a very different yet polite way to another man. Those rights which he subconsciously felt were exclusively his are now being taken away from him and he is having a difficult time digesting this fact. So he now feels the need to establish a more informal relationship with her because clearly, he is falling for her and how!
Also, Shaurya is a completely possessive man and tbh, the two of them have never respected that student-teacher boundary and now that Shaurya thinks that he has finally resigned as a lecturer and is no more a professor to her, he perhaps couldn't stop himself from making that request.
I don't know if any of this makes sense, but this is what I feel.
