It was also to show, realistically, that you don't just get over such a strong love (that Mauli had for Kunal) so quickly. Some might, others don't. May not agree with it, but it is understandable.

Lastly, it was to show Mauli herself choosing Ishaan beyond any doubts, because she knows she wants to spend the rest of her life with him and only him.

And of course, most of all, it was the writers sailing both ships.
